Much of modern travel has been smoothed into familiarity. The local made general, the unfamiliar made comfortable. One destination begins to look very much like the next.
Yet there are still places where traditions endure, with flavours found nowhere else, centuries-old crafts practised by hand, and ways of living shaped by history rather than trends. To find them is rare. To experience them from within is rarer still.
This is what Notos was created to offer.
We bring small groups of travellers to extraordinary places and invite immersion in the landscapes, traditions, and cultures that make each one unique. Every retreat is guided by a host with deep roots in the region who offers an intimate understanding of place and people.
With us, you will not watch a culture from the edge. You will cook its food, learn the stories behind its traditions, and spend time with the people who keep them alive.
Come curious. Dive in.
FEATURED RETREAT
Rising from the eastern reaches of the sun-drenched Aegean lies the island of Chios.
Nearer to the shores of Asia Minor than to Athens, this island was shaped by a long and turbulent past. It has stayed off the routes that funnel crowds to the rest of Greece, yet it is missing nothing from to the islands they flock to with medieval villages covered in dense mosaic, groves of citrus and skinos trees producing fruit and mastic, and a cuisine still kept at the family table.
Join us for a week immersed in the cuisine, culture, nature, and craft of one of Greece's greatest hidden treasures.

Our Story
Notos was built by two people who couldn't stop thinking about the same problem. WHICH IS?
Allegra spent over seven years cooking in leading kitchens across Europe and North America before finding a home between cooking and food storytelling. Years spent as a chef and retreat host on the Greek island of Andros softened her focus on food as a simply a menu to seeing it as an experience rooted in people and place.
Gavriil grew up in tourism. As a third generation travel curator, he has deep roots in the Greek islands and a restless habit of going further and more curiously than most. His obsession has always been about finding the rituals, stories and characters that exist just beyond where most stop looking.
Our Vision
Notos was built by two people who couldn't stop thinking about how to connect travellers with places where extraordinary experiences still exist, away from familiar routes and well-worn itineraries.
That is what we do.
